- 1 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup ice water
- 1 cup fresh blueberries
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Step 1: In a mixing bowl, combine flour and salt. Add cold cubed butter and mix until the mixture resembles coarse crumbs.
- Step 2: Gradually add ice water, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Step 3: Preheat oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8 inch thickness.
- Step 4: Cut the dough into rings using a round cutter or a glass, then place them on a baking sheet lined with parchment paper.
- Step 5: Bake for 15-20 minutes or until golden brown. Remove from oven and let cool completely.
- Step 6: In a mixing bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form to make vanilla cream.
- Step 7: Fill each pastry ring with vanilla cream and top with fresh blueberries.
Notes
Ensure the pastry dough is kept cold to achieve a flaky texture. You can substitute blueberries with other seasonal berries. For added flavor, consider infusing the vanilla cream with a splash of liqueur.
