Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, combine sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in grated carrots.
- Divide batter evenly among cupcake liners, filling each about 2/3 full.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cupcakes to cool completely on a wire rack.
- Meanwhile, prepare the cream cheese frosting: beat softened cream cheese and butter until creamy, then gradually add powdered sugar until smooth.
- Frost cooled cupcakes with the cream cheese frosting.
- Decorate with pastel-colored decorations, bunny ears, noses, and tails as desired.
