Description

A warm, gooey breakfast treat combining the flavors of cinnamon rolls and French toast, baked in muffin tins for easy serving and portability.


Ingredients

  • 8 slices of bread
  • 1/4 cup unsalted butter, melted
  • 4 large eggs
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1/4 cup granulated sugar
  • 1/2 cup powdered sugar
  • 2 tbsp milk (for icing)
  • 1 tsp vanilla extract (for icing)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin.
  2. Cut the bread slices into quarters and place a few pieces into each muffin cup.
  3. In a bowl, whisk together eggs, milk, vanilla extract, cinnamon, and sugar.
  4. Pour the custard mixture evenly over the bread in each muffin cup, pressing down slightly to soak.
  5. Bake in the preheated oven for 20-25 minutes until golden and set.
  6. While baking, prepare the icing by mixing powdered sugar, milk, and vanilla until smooth.
  7. Once baked, drizzle the cinnamon roll cups with icing before serving.

Notes

You can add chopped pecans or raisins to the bread before baking for extra flavor. These cups can be assembled the night before and refrigerated; bake them fresh in the morning.
