Ingredients

  • 4 large carrots, sliced into rounds
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp heavy cream or Greek yogurt (for whipped feta)
  • 1 tbsp lemon juice
  • Fresh herbs (optional, for garnish)

Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Toss sliced carrots with olive oil, honey, salt, and pepper. Spread on a baking sheet.
  2. Step 2: Roast the carrots for 25-30 minutes, turning halfway through, until caramelized and tender.
  3. Step 3: While carrots are roasting, prepare the whipped feta: in a bowl, combine feta, heavy cream (or Greek yogurt), and lemon juice. Whip until smooth and fluffy.
  4. Step 4: Once carrots are done, transfer to a serving dish. Top with dollops of whipped feta and garnish with fresh herbs if desired.

Notes

For a vegan version, substitute feta with a plant-based cheese and use maple syrup instead of honey.
