- 1 lb carrots (about 4–5 large carrots), peeled and cut into sticks
- 2 tbsp honey
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup feta cheese, crumbled
- 2 tbsp lemon juice
- 2 tbsp heavy cream (or Greek yogurt for a lighter option)
- Fresh herbs (e.g., parsley or dill) for garnish
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss the carrot sticks with honey, olive oil, salt, and pepper until evenly coated.
- Spread the carrots on the prepared baking sheet in a single layer.
- Roast in the oven for about 25-30 minutes, turning halfway through, until the carrots are tender and caramelized.
- Meanwhile, prepare the whipped feta: in a blender or food processor, combine feta cheese, lemon juice, and heavy cream. Blend until smooth and fluffy. Adjust the consistency with more cream if needed.
- Once the carrots are roasted, transfer to a serving dish. Top with the whipped feta and garnish with fresh herbs.
- Serve warm or at room temperature.
Notes
For a vegan version, substitute feta with a plant-based cheese and use agave syrup instead of honey. You can also add a sprinkle of toasted nuts for extra crunch.
