  • 1/2 cup feta cheese, crumbled
  • 2 tbsp lemon juice
  • 2 tbsp heavy cream (or Greek yogurt for a lighter option)
  • Fresh herbs (e.g., parsley or dill) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the carrot sticks with honey, olive oil, salt, and pepper until evenly coated.
  3. Spread the carrots on the prepared baking sheet in a single layer.
  4. Roast in the oven for about 25-30 minutes, turning halfway through, until the carrots are tender and caramelized.
  5. Meanwhile, prepare the whipped feta: in a blender or food processor, combine feta cheese, lemon juice, and heavy cream. Blend until smooth and fluffy. Adjust the consistency with more cream if needed.
