Description

Adorable bunny bum cupcakes with colorful sprinkles, perfect for Easter and spring celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup rainbow sprinkles

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate large bowl, beat softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Fold in rainbow sprinkles gently into the batter.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow cupcakes to cool completely before decorating.

Notes

For extra fun, decorate with bunny ears made from fondant or paper and add fluffy tails with marshmallows or frosting.
