- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 1/2 cup rainbow sprinkles
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate large bowl, beat softened butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with the dry ingredients. Mix until just combined.
- Fold in rainbow sprinkles gently into the batter.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cupcakes to cool completely before decorating.
Notes
For extra fun, decorate with bunny ears made from fondant or paper and add fluffy tails with marshmallows or frosting.
