Mini Quiches

  • Total Time: PT45M
  • Yield: 4 1x

Description

Mini quiches are small, individual savory pies that are versatile, flavorful, and perfect for brunch, gatherings, or a cozy treat. They feature a crispy crust and a creamy filling, customizable with various ingredients, and can be prepared ahead of time for convenience.

Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 34 tbsp ice water
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup shredded cheese (such as cheddar or Gruyère)
  • 1/2 cup cooked ham, diced
  • 1/2 cup fresh spinach, chopped
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg (optional)

Instructions

  1. Step 1: In a mixing bowl, combine 1 1/4 cups flour and 1/2 tsp salt. Add 1/2 cup cold, cubed unsalted butter and cut in with a pastry cutter or fingers until the mixture resembles coarse crumbs.
  2. Step 2: Add 3-4 tbsp ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for 15 minutes.
  3. Step 3: Preheat oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut into circles to fit into a mini muffin tin or line with mini tart shells.
  4. Step 4: In a bowl, whisk together 4 eggs, 1 cup heavy cream, 1/2 cup shredded cheese, 1/2 cup cooked ham, chopped spinach, 1/4 tsp black pepper, and nutmeg if using.
  5. Step 5: Divide the filling mixture evenly among the prepared crusts. Bake in the preheated oven for 25-30 minutes, or until the filling is set and the crust is golden.
  6. Step 6: Remove from oven and let cool slightly before serving.

Notes

You can customize these mini quiches with different fillings such as vegetables, cheeses, or meats. Make-ahead: refrigerate the assembled quiches and reheat before serving. For a gluten-free option, substitute with a gluten-free crust or a graham cracker base.
