Description

A vibrant, refreshing soup capturing the essence of spring with fresh peas and mint, offering a silky smooth texture and bright flavor.


Ingredients

  • 2 cups fresh peas
  • 1/4 cup fresh mint leaves
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Add the fresh peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Remove from heat and add the mint leaves. Use an immersion blender to puree the soup until smooth.
  5. Stir in the heavy cream and lemon juice. Season with salt and black pepper to taste.
  6. Serve warm or chilled, garnished with additional mint leaves if desired.

Notes

For a vegan version, substitute heavy cream with coconut cream or plant-based cream. The soup can be prepared ahead and stored in the refrigerator for up to 2 days.
