- 1 whole chicken (about 4 pounds)
- 2 lemons, sliced
- 3 tbsp olive oil
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lemon zest
Instructions
- Preheat oven to 425°F (220°C).
- In a small bowl, mix olive oil, minced garlic, chopped herbs, salt, pepper, and lemon zest to create the marinade.
- Pat the chicken dry with paper towels. Rub the marinade all over the chicken, including inside the cavity.
- Stuff lemon slices inside the cavity of the chicken.
- Place the chicken on a roasting pan, breast side up. Tie the legs together if desired.
- Roast in the preheated oven for about 30 minutes, or until the skin is golden and a thermometer inserted into the thickest part reads 165°F (74°C).
- Remove from oven and let rest for 10 minutes before carving.
Notes
For extra flavor, marinate the chicken in the herb and lemon mixture for a few hours or overnight before roasting. Serve with roasted vegetables or a fresh green salad.
