Description

A vibrant and flavorful roasted chicken infused with fresh herbs and zesty lemon, perfect for celebrating spring with bright, fresh flavors.


Ingredients

  • 1 whole chicken (about 4 pounds)
  • 2 lemons, sliced
  • 3 tbsp olive oil
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon zest

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a small bowl, mix olive oil, minced garlic, chopped herbs, salt, pepper, and lemon zest to create the marinade.
  3. Pat the chicken dry with paper towels. Rub the marinade all over the chicken, including inside the cavity.
  4. Stuff lemon slices inside the cavity of the chicken.
  5. Place the chicken on a roasting pan, breast side up. Tie the legs together if desired.
  6. Roast in the preheated oven for about 30 minutes, or until the skin is golden and a thermometer inserted into the thickest part reads 165°F (74°C).
  7. Remove from oven and let rest for 10 minutes before carving.

Notes

For extra flavor, marinate the chicken in the herb and lemon mixture for a few hours or overnight before roasting. Serve with roasted vegetables or a fresh green salad.
