  • 1 cup fresh strawberries, sliced
  • 2 tbsp granulated sugar
  • 1 egg, beaten (for egg wash)
  • 1 tbsp water (for egg wash)
  • Optional: 1 tbsp apricot jam or glaze (for shine)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the puff pastry sheet slightly to smooth it out. Cut into 4 equal squares.
  3. Place the pastry squares on the prepared baking sheet.
  4. In a small bowl, toss the sliced strawberries with 1 tablespoon of sugar. Let sit for 5 minutes to macerate.
  5. Spoon the strawberry mixture onto the center of each pastry square, leaving about a 1-inch border.
  6. Fold the corners of each square towards the center to form a parcel, pinching the edges to seal, or leave open for a rustic look.
  7. In a small bowl, whisk together the beaten egg and water to make an egg wash. Brush the tops of the pastries with the egg wash.
  8. Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and flaky.
  9. Optional: Warm the apricot jam and brush over the baked pastries for a shiny glaze.
  10. Serve warm or at room temperature.

Notes

Ensure the puff pastry remains cold during handling to keep it flaky. You can customize the filling with other berries or add a dollop of cream cheese for extra richness.
