- 1 sheet puff pastry (about 250g), thawed
- 1 cup fresh strawberries, sliced
- 2 tbsp granulated sugar
- 1 egg, beaten (for egg wash)
- 1 tbsp water (for egg wash)
- Optional: 1 tbsp apricot jam or glaze (for shine)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the puff pastry sheet slightly to smooth it out. Cut into 4 equal squares.
- Place the pastry squares on the prepared baking sheet.
- In a small bowl, toss the sliced strawberries with 1 tablespoon of sugar. Let sit for 5 minutes to macerate.
- Spoon the strawberry mixture onto the center of each pastry square, leaving about a 1-inch border.
- Fold the corners of each square towards the center to form a parcel, pinching the edges to seal, or leave open for a rustic look.
- In a small bowl, whisk together the beaten egg and water to make an egg wash. Brush the tops of the pastries with the egg wash.
- Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and flaky.
- Optional: Warm the apricot jam and brush over the baked pastries for a shiny glaze.
- Serve warm or at room temperature.
Notes
Ensure the puff pastry remains cold during handling to keep it flaky. You can customize the filling with other berries or add a dollop of cream cheese for extra richness.
