Ingredients

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced
  • 1 cup corn kernels
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp chili flakes (optional)
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onions and cook until translucent, about 3-4 minutes.
  3. Add minced garlic and cook for another 30 seconds.
  4. Add ground beef to the skillet, breaking it apart with a wooden spoon, and cook until browned, about 8-10 minutes.
  5. Stir in diced bell peppers and corn, cook for another 5 minutes until vegetables are tender.
  6. Season with salt, black pepper, paprika, and chili flakes if using.
