- 2 cups all-purpose flour
- 1 tsp salt
- 1/2 cup unsalted butter, browned
- 1 cup Greek yogurt
- 1 cup roasted, salted pistachios, chopped
- 1 tsp almond extract
- 1/2 cup granulated sugar
- 3 large eggs
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a cake pan.
- In a mixing bowl, cream together the browned butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Stir in the almond extract.
- Gradually add the flour and salt, mixing until just combined.
- Fold in the Greek yogurt and chopped pistachios.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving. Optional: top with additional chopped pistachios or glaze.
Notes
For extra flavor, toast the pistachios before chopping. You can also add chocolate chips or citrus zest for variation.
