Description

Ingredients

  • 4 crusty baguette rolls
  • 1/2 cup basil pesto
  • 2 cups cooked chicken, sliced
  • 8 oz fresh mozzarella cheese, sliced
  • Optional: fresh basil leaves for garnish

Instructions

  1. Slice the baguette rolls in half lengthwise.
  2. Spread 2 tablespoons of basil pesto on the bottom half of each roll.
  3. Layer sliced cooked chicken over the pesto.
  4. Top with slices of fresh mozzarella cheese.
  5. Place the top half of the roll over the fillings.
  6. Optional: garnish with fresh basil leaves.

Notes

You can use leftover grilled or rotisserie chicken. For a warm sandwich, toast the assembled sandwiches in the oven at 350°F (175°C) for 5 minutes before serving.
