Ingredients
2 small chicken breasts (or 1 large), cooked and sliced
1 ripe avocado, sliced or lightly mashed
2–4 slices cheese (Swiss, provolone, or cheddar)
4 slices sourdough or ciabatta bread
1 small tomato, sliced
¼ small red onion, thinly sliced (optional)
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
Butter or olive oil, for grilling
Salt and pepper, to taste
Instructions
Spread mayonnaise on one side of each bread slice. Spread Dijon mustard on the opposite side.
Place one slice of bread mayo-side down on a cutting board. Layer with cheese, chicken, tomato, onion (if using), avocado, and a second slice of cheese.
Top with the second bread slice, mayo-side out.
Heat a skillet over medium heat with butter or olive oil. Grill the sandwich for 3–4 minutes per side, pressing lightly, until bread is golden and cheese is melted.
Remove from skillet, let rest 1 minute, then slice and serve warm.

Use leftover rotisserie chicken for a quick shortcut.
