- 2 lbs beef chuck roast
- 1 cup beef broth
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 4 slices provolone cheese
- 4 crusty sandwich rolls
Instructions
- Step 1: Place the beef chuck roast in the crockpot.
- Step 2: Add sliced onion, minced garlic, salt, black pepper, and dried thyme over the beef.
- Step 3: Pour beef broth into the crockpot.
- Step 4: Cover and cook on low for 8 hours or high for 4 hours until the beef is tender and easily shredded.
- Step 5: Remove the beef from the crockpot and shred it with two forks.
- Step 6: Return shredded beef to the crockpot and keep warm.
- Step 7: Preheat the oven to 375°F (190°C).
- Step 8: Place sandwich rolls on a baking sheet, top each with a slice of provolone cheese, and bake until cheese is melted, about 5 minutes.
- Step 9: Serve the beef on the rolls with a side of the au jus for dipping.
Notes
For extra flavor, you can add a splash of Worcestershire sauce or a sprig of fresh rosemary to the crockpot. Use crusty rolls for the best texture and flavor.
