  • 2 cups cooked rice
  • 1 cup cooked ham, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 large eggs
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 2 tablespoons vegetable oil
  • 1 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add diced ham and cook until slightly crispy, about 3-4 minutes.
  3. Push ham to one side of the skillet, then crack eggs into the empty side and scramble until fully cooked.
  4. Add cooked rice to the skillet, breaking up any clumps, and stir to combine with ham and eggs.
  5. Stir in frozen peas and diced carrots, cooking for another 2-3 minutes until vegetables are tender.
  6. Add soy sauce and sesame oil, stirring well to coat all ingredients.
  7. Sprinkle shredded cheese over the rice and stir until melted and evenly distributed.
  8. Serve hot, garnished with additional scallions if desired.
