- 2 cups cooked rice
- 1 cup cooked ham, diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 large eggs
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 2 tablespoons vegetable oil
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add diced ham and cook until slightly crispy, about 3-4 minutes.
- Push ham to one side of the skillet, then crack eggs into the empty side and scramble until fully cooked.
- Add cooked rice to the skillet, breaking up any clumps, and stir to combine with ham and eggs.
- Stir in frozen peas and diced carrots, cooking for another 2-3 minutes until vegetables are tender.
- Add soy sauce and sesame oil, stirring well to coat all ingredients.
- Sprinkle shredded cheese over the rice and stir until melted and evenly distributed.
- Serve hot, garnished with additional scallions if desired.
Notes
Feel free to customize with other vegetables or proteins like chicken or shrimp. Use leftover rice for best results.
