Description
A quick, healthy, and customizable meal featuring flaky roasted salmon alongside caramelized vegetables, all cooked on one sheet pan for minimal cleanup and maximum flavor.

- 4 salmon fillets (about 6 oz each)
- 2 cups cherry tomatoes
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, sliced
- 2 cloves garlic, minced
- 1 tsp dried thyme (optional)
- 1 tsp dried rosemary (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
- In a small bowl, mix 1 tbsp olive oil, minced garlic, salt, pepper, thyme, and rosemary.
- Place the salmon fillets on the prepared baking sheet. Brush each fillet with half of the olive oil mixture.
- Arrange cherry tomatoes, sliced red bell pepper, and zucchini around the salmon on the sheet. Drizzle the remaining olive oil mixture over the vegetables.
- Place lemon slices on top of the salmon and vegetables.
- Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from oven and serve immediately, garnished with additional lemon if desired.
Notes
Feel free to customize the vegetables and seasonings to your taste. For extra flavor, add a sprinkle of parmesan cheese or a drizzle of balsamic vinegar before serving.
