Description

  • 2 pounds potatoes (Yukon Gold or Russet)
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp unsalted butter, melted
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme (optional)
  • 1 tsp dried rosemary (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash and cut the potatoes into 1-inch cubes. In a large bowl, toss the potatoes with olive oil, salt, pepper, and optional herbs.
  3. Spread the potatoes evenly on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until golden and crispy.
  4. Meanwhile, in a small bowl, combine melted butter and minced garlic.
  5. Once potatoes are roasted, remove from oven and drizzle with garlic butter mixture. Toss to coat evenly.
  6. Sprinkle grated Parmesan cheese over the potatoes and return to the oven for an additional 5 minutes, until cheese is melted and slightly golden.
  7. Serve hot, garnished with additional Parmesan or herbs if desired.
