- 2 pounds potatoes (Yukon Gold or Russet)
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp unsalted butter, melted
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme (optional)
- 1 tsp dried rosemary (optional)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and cut the potatoes into 1-inch cubes. In a large bowl, toss the potatoes with olive oil, salt, pepper, and optional herbs.
- Spread the potatoes evenly on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until golden and crispy.
- Meanwhile, in a small bowl, combine melted butter and minced garlic.
- Once potatoes are roasted, remove from oven and drizzle with garlic butter mixture. Toss to coat evenly.
- Sprinkle grated Parmesan cheese over the potatoes and return to the oven for an additional 5 minutes, until cheese is melted and slightly golden.
- Serve hot, garnished with additional Parmesan or herbs if desired.
Notes
For extra flavor, toss the potatoes with fresh herbs like parsley or chives before serving. Adjust seasoning to taste.
