- 3 tbsp honey
- 2 tbsp olive oil

- 1 cup feta cheese, crumbled

- 1 tbsp lemon juice
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss the carrot sticks with honey, olive oil, salt, and pepper until evenly coated.
- Spread the carrots on a baking sheet lined with parchment paper.
- Roast in the oven for 25-30 minutes, turning halfway through, until caramelized and tender.
- Meanwhile, prepare the whipped feta: in a blender or food processor, combine feta, heavy cream (or Greek yogurt), and lemon juice. Blend until smooth and fluffy.
- Serve the roasted carrots topped with dollops of whipped feta.
Notes
