  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar

  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup crushed pineapple (optional)
  • 1/2 cup chopped walnuts (optional)
  • Cream cheese frosting:

Instructions

  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. Add the vegetable oil, sugar, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Fold in the grated carrots, crushed pineapple (if using), and chopped walnuts (if using).
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Spread the cream cheese frosting over the cooled loaf and decorate as desired.

Notes

Feel free to add your favorite nuts, raisins, or shredded coconut for extra flavor and texture. The loaf improves in flavor the next day, making it ideal for preparing ahead of time.
