Description

Ingredients

  • 4 oz semi-sweet chocolate, chopped
  • 3 large eggs
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Step 1: Preheat the oven to 325°F (160°C).
  2. Step 2: In a saucepan, heat the heavy cream over medium heat until just simmering.
  3. Step 3: Remove from heat and add the chopped chocolate, stirring until smooth.
  4. Step 4: In a bowl, whisk together eggs, sugar, and vanilla extract.
  5. Step 5: Gradually pour the warm chocolate mixture into the egg mixture, whisking constantly to prevent curdling.
  6. Step 6: Strain the custard through a fine sieve into a bowl to ensure smoothness.
  7. Step 7: Divide the custard evenly among four ramekins.
  8. Step 8: Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  9. Step 9: Bake for 25-30 minutes, until the custards are just set but still slightly jiggly in the center.
  10. Step 10: Remove from oven, let cool slightly, then refrigerate for at least 2 hours before serving.

Notes
