Bacon Cheeseburger Soup

  • Total Time: PT45M
  • Yield: 4 1x

Description

A warm, creamy soup combining smoky bacon, tender potatoes, melted cheese, and seasoned ground beef, inspired by classic cheeseburgers. Perfect for comfort food lovers seeking an easy, hearty, one-pot meal.

Ingredients

Scale
  • 4 slices bacon
  • 1 lb ground beef
  • 3 cups potatoes, diced
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Step 1: Cook bacon in a large pot over medium heat until crispy. Remove bacon and set aside, leaving the bacon drippings in the pot.
  2. Step 2: Add ground beef to the pot and cook until browned. Remove and set aside with bacon.
  3. Step 3: In the same pot, sauté diced onion and minced garlic until translucent.
  4. Step 4: Add diced potatoes, beef broth, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Step 5: Stir in milk, heavy cream, shredded cheddar cheese, cooked ground beef, and crumbled bacon. Cook until cheese is melted and the soup is heated through.
  6. Step 6: Serve hot, garnished with additional bacon and cheese if desired.

Notes

Feel free to customize with additional vegetables like corn or peppers, or adjust the cheese to your preference. Store leftovers in airtight containers and reheat gently.
