Description

A slow-cooked beef roast with a Parmesan crust, infused with garlic and herbs, resulting in tender, flavorful meat with a rich gravy.


Ingredients

  • 2 lbs beef chuck roast
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Season the beef chuck roast with salt, pepper, garlic, thyme, and rosemary.
  2. Heat olive oil in a skillet over medium-high heat and sear the roast until browned on all sides.
  3. Transfer the seared roast to a slow cooker.
  4. Pour beef broth over the roast.
  5. Sprinkle grated Parmesan cheese evenly over the top of the roast.
  6. Cover and cook on low for 6-8 hours until the beef is tender and easily shredded.
  7. Once cooked, serve the roast with the Parmesan crust and gravy spooned over.

Notes

For an extra crispy Parmesan crust, broil the roast for 2-3 minutes after slow cooking. Serve with mashed potatoes or crusty bread to enjoy the rich gravy.
