  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch baking dish.
  2. In a mixing bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat eggs and sugar until well combined. Mix in melted butter, lemon juice, lemon zest, and vanilla extract.
  4. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  5. Gently fold in blueberries.
  6. Pour batter into prepared baking dish and smooth the top.
  7. Bake for 30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before serving. Serve warm with a dusting of powdered sugar or whipped cream if desired.

Notes

This cake is best enjoyed fresh but can be stored in an airtight container for up to 2 days. The blueberries may bubble over during baking, so placing a baking sheet underneath is recommended.
