- 1 cup cooked chicken, shredded
- 1 cup enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 12 small tortilla cups or mini flour tortillas
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Lightly brush the tortilla cups with olive oil and place them on a baking sheet.
- In a bowl, combine shredded chicken, enchilada sauce, salt, and pepper.
- Spoon the chicken mixture into each tortilla cup.
- Sprinkle shredded cheese on top of each filled cup.
- Bake in the preheated oven for 20-25 minutes, until the shells are crispy and cheese is melted.
- Remove from oven and let cool slightly before serving.
Notes
You can customize the spice level by adding jalapeños or hot sauce. For a vegetarian version, substitute chicken with black beans or roasted vegetables.
