Description

Ingredients

  • 8 oz ramen noodles
  • 4 cups vegetable broth
  • 1/4 cup miso paste
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 14 oz firm tofu, silken or extra firm
  • 2 green onions, sliced
  • 1 sheet nori, cut into strips
  • 1 tbsp vegetable oil

Instructions

  1. Step 1: Heat vegetable oil in a large pot over medium heat.
  2. Step 2: Add the miso paste, soy sauce, and sesame oil to the pot, stirring to combine.
  3. Step 3: Pour in the vegetable broth and bring to a simmer.
  4. Step 4: Add the ramen noodles to the broth and cook according to package instructions, about 3-4 minutes.
  5. Step 5: While the noodles cook, cut the tofu into small cubes.
  6. Step 6: Add the tofu to the simmering broth and cook for an additional 2-3 minutes until heated through.
  7. Step 7: Serve the soup hot, garnished with sliced green onions and nori strips.
